Almost Paleo Zucchini Mushroom Risotto


1 large red onion chopped

2 Zucchini sliced

1 box of Champignons sliced

2 cups of cooked rice

4 eggs

1 cup of shredded cheese

Olive Oil

Salt and Pepper to taste

Italian Herbs – Oregano, Thyme, Rosemary


  1. Cut and slice the onion, zucchini and mushrooms
  2. Heat the olive oil in a large pan
  3. Add the cut vegetables and saute for 5 minutes on medium heat, until the vegetables shrink and soften in the pan
  4. add the cooked rice – I used Jasmine Long Grain Rice, not risotto rice
  5. add the eggs and mix very well
  6. season to taste with salt, pepper and Italian herbs
  7. stir very well
  8. add the shredded cheese
  9. Serve and enjoy!
