Ingredients:
1 large red onion chopped
2 Zucchini sliced
1 box of Champignons sliced
2 cups of cooked rice
4 eggs
1 cup of shredded cheese
Olive Oil
Salt and Pepper to taste
Italian Herbs – Oregano, Thyme, Rosemary
- Cut and slice the onion, zucchini and mushrooms
- Heat the olive oil in a large pan
- Add the cut vegetables and saute for 5 minutes on medium heat, until the vegetables shrink and soften in the pan
- add the cooked rice – I used Jasmine Long Grain Rice, not risotto rice
- add the eggs and mix very well
- season to taste with salt, pepper and Italian herbs
- stir very well
- add the shredded cheese
- Serve and enjoy!
