Paleo Salad Dressing

Hello everybody,

Do you like to eat salad? What paleo dressing for your salad do you use?

Well, I know I do love salad and I do make my own dressing. Especially after I have been at the beach, swimming in the wonderful ocean. Like we did Saturday and Sunday. Oh it was so beautiful. Saturday we went at 6am to the beach, first for a walk and then for Aquafit Exercises, and Sunday we went at 6am just to swim in the ocean. What a treat 🙂

But all this swimming and exercising makes hungry. Very hungry. And I was quite tired on Saturday, I have to admit. So for lunch I made salad. Easy and simple with a paleo salad dressing.

Mixed greens, tomato, red onions – lots of them and blue cheese. Now my husband likes already pre-made salad dressings. I do not care for them. Even an Italian Dressing has ingredients I do not need in my salad. So I make my own vinaigrette.

My dressing varies slightly depending on the ingredients of the salad. If I have a boiled egg in my salad, I do not need to use mustard in order to get a creamy dressing. But without an egg, I use olive oil, balsamic vinegar, salt pepper and plain mustard. There is no secret ingredient in my dressing, just the basics. Sometimes I even substitute the vinegar with lemon, if I have a fresh lemon on hand.

Now one oil I am really missing in this country, and that is Pumpkin Seed Oil. We have that in Austria and it is absolutely delicious. I found it a long time ago when I was visiting New York, but down here in Miami there is no such thing.

Sometimes my husband likes creamy dressings like ranch and blue cheese. So if I have some blue cheese I try to make it for him, in order to avoid the store bought version. I just add some melted blue cheese in the mix and he loves it.

So back to the main question – Paleo Salad Dressing, is there such a thing. Well, for me it is any clean dressing with oil and vinegar/lemon.
