Coconut and Chocolate = Mound Bars – Yummy!!!

I hope you are having a beautiful and restful Sunday. As everyday, we are getting ready for a thunderstorm here Paleo Gluten Free Mounds Barsin South Florida. With it comes lots of water and what else: Mosquitos. It is getting really bad with all the rain we are having.

So I decided to stay inside and watch the games today. I am also preparing to make some mound bars. Who does not love mound bars, right?

For me Coconut and Chocolate = Mound Bars – Yummy!!! I always loved those Almond Mound Bars and also the regular ones without the almond in it.

Paleo Gluten Free Mounds Bar cutBut store bought mound bars contain more than just dark chocolate, coconut and maybe a little but of honey or maple syrup. So my husband brought me 85% Dark Chocolate and I have coconut flakes in the freezer. I put out the coconut flakes to defrost and then I am going to heat the chocolate and paint it into my silicone molds. After a few minutes in the freezer I will fill the molds with a mixture of coconut flakes and maple syrup. After heating chocolate again I am going to top the molds with another layer of chocolate and put them in the freezer for about an hour. As we like our chocolate frozen, I will keep the chocolate mounds in the freezer after I take them out of the silicone molds.

This is very easy to make and you can add an almond before you put in the coconut – maple syrup mixture.
